What happens when you combine ancient preservation techniques with modern microbiology? You get the "Art of Fermentation" workshop—one of our most popular interdisciplinary studios. Here, the kitchen becomes a high-density science lab.
The Biology of the Invisible
Students spent the first week observing the "life" inside a jar of sauerkraut. Using microscopes and pH strips, they tracked the transition from raw cabbage to a probiotic powerhouse. They learned about Lactobacillus and the anaerobic conditions required for a successful ferment.
The Chemistry of Taste
Beyond the biology, we explored the chemistry of flavor. How does lactic acid change the texture of a vegetable? Why does salt inhibit certain bacteria while promoting others? The students didn't just follow recipes; they engineered environments for specific microbial outcomes.
Synthesis: The Final Tasting
The workshop concluded with a "Fermentation Feast," where students presented their customized kimchis, kombuchas, and sourdoughs. It was a perfect example of the SPOT approach: take a real-world artifact, deconstruct it using science, and reconstruct it using creativity.
